Campfire Ham and Pineapple Recipe

Ham steaks are great campfire fare because they’re precooked , so you essentially need only to heat them through. Figure on about 3 to 4 ounces of ham per kid’s portion, slightly more for adults. For added zip, we recommend dressing the ham with a quick-to-mix mustard sauce and grilled pineapple slices.

Ingredients:

4 tbsp. Dijon or creamy Dijon-style mustard, 1 tbsp maple syrup, 1 tbsp. olive or vegetable oil, ½ tsp. 5-spice powder (or a mix of 1/8 teaspoon each of cinnamon, ground ginger, and ground cloves), 1 tsp. soy sauce (optional), Ham steak (about 2 pounds and 1 inch thick), canned pineapple slices.

  1. To make the sauce, whisk the mustard, maple syrup, oil, 5-spice powder, and soy sauce (if desired) in a small bowl.
  2. Cut the ham into individual portions and use a pastry brush to spread the mustard mixture on both sides of each piece (another great job for the kids). Grill the ham 5 or more minutes n each side until it heats through. Grill the pineapple slices at the same time and serve them atop the ham. Makes about 6 servings.
  3. Do-ahead Tip for Campers: Mix the mustard sauce at home and seal it in a small plastic container that can be packed in your cooler. You can also cut the ham into servings and pack them in a sealable plastic bag.
  4. Cooking a foil pan of boxed scalloped potatoes creates a well rounded meal.
